Pineapple Salsa (raw-vegan)

Salsa is another one of those mixtures that we can take as an opportunity to be creative. Just because it says SALSA, one should not assume that it is traditional tomato based item. I like to think of salsa as a topping or dip made of cut up fresh ingredients; fruit, veggies and herbs alike. I have several salsa recipes that I make but this one is fun, robust and can be used in many places. I have used my PINEAPPLE SALSA as many things. I have served it with raw blue tortilla chips as an appetizer and topped my raw vegan “taco” salad with it too.  As you can see it is a versatile dish. Now that you know about it, where will you serve it?

Serves 4

1 small organic lime

1 1/2 cup fresh ripe organic pineapple, small diced

1 TBSP fine chopped organic ginger root, do not peel

3 large fresh organic garlic cloves

1/4 cup fresh organic cilantro leaves

1/2 small fresh organic jalapeno

2 organic green onions

1 decorative pineapple bowl

In a medium mixing bowl, zest the lime and juice it. Add the diced pineapple and chopped ginger, mix well. Fine chop the garlic cloves, cilantro and jalapeno, add to the bowl and mix well. Thin slice the green onion and add this to the bowl and mix it all well. Cover and refrigerate for 3 hours. When you are ready to serve it, give it a quick mix and transfer to your DECORATIVE PINEAPPLE BOWL(click here for directions), NOTE: if you are doing this recipe ahead, just follow the directions and make sure you store in the refrigerator in an airtight container for up to 2 days, then transfer to your decorative pineapple bowl….
