SUNDAY’S FRUIT SALAD SMOOTHIE (raw-vegan)

Sunday brunch is one of my families favorite meals. It seems like when we are going to have Sunday brunch, I tend to plan the menu all week long. I like to always include the classics and no doubt there will be a fresh fruit salad. Because of where I live, there is always in season fruit available to me to serve. Spring and summer have the best variety of fruit, but autumn and winter have quite the bounty too. This past Sunday we had 15 of us at brunch thus the fruit salad was HUGE! I don’t mind that it was but I found that there was some leftovers that I needed to use up. After enjoying it again that night for dessert, I looked in the bowl and found there was still quite a bit remaining, now what? Well, how about a SUNDAY’S FRUIT SALAD SMOOTHIE? This idea made total sense to me, I couldn’t wait until the morning to whip one up. Since all of the fruit in the salad are some of my favorites anyways, it made a GREAT SMOOTHIE!! I was actually pleased that all I needed to do was add some water to make it smooth. Now that I have put a bug in your ear about making a smoothie out of the leftovers from your fruit salad, you might want to make that salad bigger so you too can enjoy this smoothie! ODE to SUNDAY BRUNCH!

A CHEF’S TIP: when you make up your fruit salad for Sunday brunch add 1 TBSP fresh lemon juice to every 4 cups of fruit, it will keep items like apples and bananas from browning by the next day. I am also going to provide you with the recipe for this smoothie in case you do not have any leftovers.

SERVES 1

IF ACTUALLY USING LEFTOVER FRUIT SALAD:

2 1/2 cups leftover organic fruit salad from brunch

1/2 cup water

Place the ingredients in your blender and blend on high for 2 minutes until smooth and creamy. Pour in your serving glass and enjoy!

IF YOU ARE STARTING FROM SCRATCH: this is the combo of fruit I used in my salad on Sunday, this would be the ratio listed

1/2 cup ripe organic strawberry slices

1/2 large ripe organic banana

1/2 organic ruby red grapefruit, medium chunked

1 organic mandarin, peel and lobe

1/2 cup water

Place the ingredients in your blender and blend on high for 2 minutes until smooth and creamy. Pour in your serving glass and enjoy!

NOTE: the scratch recipe (minus the water) is the base for a GREAT fruit salad, multiply the fruit by 4 for an amount that serves 6
