BLUEBERRY SWIRL CHEESE (raw-vegan)
Fresh blueberries are on the top of my list of favorite fruits. I not only eat them raw by themselves but like to put them in different recipes. I am not a big “sweets” person but every now and again the tooth comes alive. Although my blueberry swirl cheese is more on the savory side, is satisfies the ting of the sweet tooth that comes out from time to time. For the RAW foodies this goes great in a RAW Cheese Nut Fruit Parfait (shown above) and for the NON-raw foodies, put this cheese on your sprouted organic wheat bagels (as shown below). [NOTE: recipes below] No matter who you are I am sure you will enjoy this!
MAKES ABOUT 3/4 CUP
1/2 cup raw CASHEW CHEESE (click for recipe)
1/2 cup raw whole organic blueberries
1 tsp water
2 tsp raw organic agave syrup
In a small bowl, mix your cashew cheese and agave syrup well. In your food processor, add your 1/2 cup blueberries and water, puree. Pour your blueberry puree into the cashew cheese and only give it a few stirs (you want a swirl look). Serve immediately.
To make the CHEESE FRUIT NUT PARFAIT (raw)
1 cup BLUEBERRY SWIRL CHEESE
1 1/2 cups fresh organic whole blueberries
1 cup fresh organic blackberries
3 TBSP raw organic whole walnuts (use whole nuts for the best quality), break into pieces
3 TBSP raw organic whole pepitas
In your serving dish or ice cream flute, layer the cheese, fruit and nuts. Use the picture above as a reference. There is not wrong way to layer it, just keep in mind that the flavors all mix well so do multiple layers of each item.
To use as a spread
1/2 cup of spread will generously cover two halves of a bagel
add extra fresh organic blueberries as a garnish
