This is a SUPER easy recipe and is great for a fast appetizer for unexpected company, before dinner or a snack (like I am having right now).
1 large ripe organic avocado, pit and medium diced
2 small organic vine ripe tomatoes, medium diced
1/2 small organic yellow onion, medium diced
1 small organic ripe lemon, zest and juice, reserve both
2 TBSP. fine chopped fresh organic cilantro (from your window herb garden)
1 ripe organic hot pepper fine diced, I use hot banana pepper from my window garden(use full pepper for HOT, 1/2 for medium spicy, 1/4 for mild)
1/4 tsp. fresh ground sea salt
Mix all of the above ingredients in a bowl, allow to set 10 minutes. Serve with organic salted blue corn chips.
