CLEMENTINE ROSEMARY SPRITZER (raw-vegan)
Clementines (aka “CUTIES) are a great little citrus fruit. They are juicy, sweet and are easy to peel for an on the go snack. I really like the mild and not too acidic flavor of them also. As a Chef, I like to experiment with different flavor, both savory and sweet. One combination I really like is citrus and rosemary. I feel these two flavors balance each other out and compliment each other well. As most of you know I am on a strict RAW VEGAN yearly kick-start right now for a couple of weeks; so in turn I am developing some new RAW VEGAN recipes. The one thing I am really enjoying is the SPRITZER! A spritzer is juice and sparkling mineral water. It not only is a great alternative to sugary alcoholic mixed drinks at gatherings and parties; it is also a great refreshing way to get your glasses of water in. I hope you enjoy my CLEMENTINE ROSEMARY SPRITZER anytime during the day.
1 packed cup fresh organic clementine lobes
zest of 1 whole organic clementine (use a vegetable peeler to remove the zest)
1 packed TBSP of fresh organic rosemary leaves
12 ounces of sparkling unflavored/unsweetened mineral water
In your blender add the zest and rosemary leaves and blend on high for 1 minute until chopped fine. Add your clementine lobes and blend on high for 2 minutes. Add this to a large serving glass and top with 12 ounces of sparkling water. WARNING: it will fuzz up to the top so pour slowly. Also the pulp from the clementines and the rosemary leaves are light so they will float to the top… Give your spritzer a good stir before enjoying. CHEERS!
