Coconut Banana Smoothie (raw-vegan)

One of my favorite things in the morning is a fresh made smoothie. Since I keep a variety of fruits and veggies around at all times, I never get bored with the combinations that I can create. I have been creating a RUSTIC and SIMPLE SMOOTHIE COLLECTION to highlight some of these combinations.  On this list is my COCONUT BANANA SMOOTHIE. It is bursting with flavor of fresh coconut and ripe bananas, a tropical treat for sure. Not only is this smoothie good for my taste-buds but it is definitely good for my tummy too! The coconut water is hydrating and full of nutrients, the coconut meat is full of vitamins and good fats, and the bananas are about close to perfect as a food can get. With all this good stuff going into my tummy, no wonder I feel energized after one of these tasty smoothies. This makes for a great mid-afternoon snack to re-energize me, a great tasting dessert and I have also substituted ice for the water to make an iced smoothie. Give this recipe a try tomorrow morning and hopefully you will add it to your list of favorite smoothies too. ENJOY!


3/4 cup fresh organic young Thai coconut water

1/2 cup fresh organic young Thai coconut meat

2 very ripe large organic bananas, peel and break into chunks

1/3 cup water*

In your blender, blend on high the coconut water and coconut meat until smooth. Add the banana chunks and water. Blend on high until thick and smooth. Pour into your serving glass and enjoy!!

*IF YOU ARE USING ICE INSTEAD: Place ice in the blender first with the coconut water and blend on high for 30 seconds, then resume directions.

NOTE: this is a thick smoothie, almost shake consistency. If you prefer a thinner smoothie, just add small amounts of water after the above directions are completed until desired consistency is achieved.
