Creamy Herb Cucumber Dressing (raw-vegan)

Never let the word “creamy” deter you from a dressing recipe especially if it is my CREAMY HERB CUCUMBER DRESSING. Most do not think of a creamy dressing as RAW and VEGAN but this one is. Instead of using fatty mayo or sour cream, this recipe uses healthy AVOCADO as a thickener. You can use this dressing on pretty much anything that you want a fresh, tangy creamy dressing. The dressing is shown drizzled on a fresh ALL organic raw salad of butter lettuce, pea pod spouts, white mushrooms and Persimmon.


1 TBSP fresh organic jalapeno, fine chopped

3 large organic garlic cloves

1/2 medium ripe organic lemon, reserve juice for recipe and save peel for another recipe

1 medium organic cucumber, do NOT peel, cut into 8 pieces

1/4 cup water

1 tsp. raw organic apple cider vinegar

1/4 cup fresh organic cilantro

1/3 cup fresh organic curly parsley

1/4 cup fresh ripe organic avocado

In your blender put in the jalapeno and garlic, chop fine. Add the lemon juice, cucumber, water and vinegar and blend until smooth. Add the cilantro and curly parsley, blend until smooth. Now add the avocado and blend on high for 2 minutes. Remove from blender and put into a bowl, cover and refrigerate for 30 minutes before serving. Store remaining dressing covered in refrigerator for up to 3 days, stir well before serving.
