FIESTA CORN AVOCADO SALAD (raw-vegan)
Avocados are definitely on top of my list of favorite super foods. They are basically a complete food that really pack in nutrients and vitamins that I need to stay healthy. They are also a great source for complete protein especially for us non-animal product eaters. This recipe is a fun way to present a chopped salad, even for the veggie nay-sayers you might know. One of the best things about it, besides the great flavors, is that is RAW and VEGAN; so you will stay on track. ENJOY!
MAKES 2 STUFFED AVOCADO HALVES (multiply accordingly) NOTE: Use the remaining avocado half for your dressing–see link below
1/4 cup raw organic corn kernels
1/4 cup fresh organic red pepper, fine dice same size as corn kernels
1 tsp fresh organic jalapeno, super fine diced
1/4 cup organic cucumber, do NOT peel, fine diced
1/4 cup organic avocado (1 half of medium avocado), small diced
1/2 tsp raw organic apple cider vinegar
2 TBSP raw/vegan CREAMY HERB CUCUMBER DRESSING (click for recipe)
2 cleaned avocado shell halves
organic cilantro leaves and stems for garnish
In a medium mixing bowl, mix all of the ingredients EXCEPT the dressing well. Now gently mix with the dressing, this is now your salad mixture. Fill each shell half with 1/2 of the salad mixture, garnish with fresh cilantro.
