Fresh Veggie Pizza (vegan)

FRESH VEGGIE PIZZA (vegan)

This is quick and easy fresh veggie pizza a crowd pleaser even for the picky vegans (like me) in your life.

SERVES 4

1 one pound par cooked vegan 6 organic grain or sprouted organic grain vegan pizza shell (homemade or store bought)

3 large vine ripe organic tomatoes, fine pulse in your food processor

6 medium fresh organic garlic cloves, fine pulse in your food processor

1/2 cup fresh organic basil leaves (from your window herb garden) fine pulse in your food processor

1/2 large organic Meyer lemon, reserve zest and juice

1 TBSP raw coconut aminos

1 TBSP organic olive oil (NOT VIRGIN)

1 cup fresh organic red bell pepper, thin sliced

1/2 cup fresh organic yellow onion, thin sliced

1 cup fresh organic zucchini, thin sliced

1 cup whole organic raw cashews

6  large fresh organic basil leaves, chiffonade [stack leaves on each other, roll tightly lengthwise and thin slice the roll width-wise to make thin ribbons as shown above.]

Preheat your oven to 350 degrees. In a medium sauce pot, put your pulsed tomatoes, garlic, basil, lemon zest, lemon juice, coconut aminos in and stir well. On medium heat and while occasionally stirring, bring to a boil and then continue to cook until all remaining liquid is gone, be sure not to burn; this is your tomato sauce. Brush your pizza shell with the olive oil on both sides and place on a pizza pan( I use one with the vent holes on the bottom). In your clean food processor, chop the cashews until a fine meal. Spread your tomato sauce evenly on the brushed pizza shell. Evenly distribute the red pepper, onions and zucchini on top of the sauce. Spread the cashew meal evenly on top of the veggies. Place your dressed pizza shell in the middle rack of your oven and bake for 18 minutes, turn the whole pan 1/2 turn after 8 minutes. Now turn your broiler on and broil the pizza for about 4 minutes , turn at 2 minutes; broil until medium golden brown, be sure not to burn. Remove pizza from oven and allow to rest 5 minutes before cutting. Cut into 8 even slices, garnish with chiffonade basil and serve immediately. ENJOY your pizza party!!
