Frijoles Negros Cubanos (vegan)

FRIJOLES NEGROS CUBANOS (VEGAN)

A modern vegan twist on a traditional classic from Cuba

SERVES 2 MAIN COURSES OR 4 SIDE DISHES

NOTE: this is a 3 part recipe

part 1 (prepare the beans)

2 cups pre-soaked dried organic frijoles negros (black beans) {follow directions on package either for the quick soak or the overnight soak}

6 c water

1 Tbsp dried organic onions

1Tbsp freshly fine ground cumin seed

½ tsp chili powder

6 cloves fresh organic garlic finely chopped

1 tsp freshly fine ground espresso roasted organic coffee

put ABOVE ingredients in a large pot and simmer uncovered on medium heat stirring occasionally about 3–4 hours until beans are soft but not mushy (softer then al’ dente), you may add extra water ¼ cup at a time to prevent burning. You do want some liquid to be left, do not drain. When done make avocado salsa (see below). Stir before serving.

part 2 (make the salsa)

2 tsp fresh fine chopped organic oregano (from your window herb garden?)

½ cup fine diced organic red bell pepper

1 whole ripe organic avocado fine diced

¼ cup fine diced organic white sweet onion

2 tsp coconut or white vinegar

¼ tsp fresh ground pink sea salt

mix well in a bowl with a wooden paddle or spoon, do not mash

part 3 (serve and garnish)

2 OREGANO SPRIGS if serving as main course, 4 OREGANO SPRIGS if serving as a side dish (from your window herb garden?)

if serving as  main course:

in 2 entree serving bowls put ½ of beans in center of each bowl in a pile, using a regular tablespoon spoon make a “dish” in the center of the pile of beans for the salsa. Scoop ½ of the salsa into the “dish” into a heap and garnish with an oregano sprig on top as shown in picture. Serve immediately.

if serving as side dishes:

in 4 small serving bowls put ¼ of beans in center of each bowl in a pile, using a regular tablespoon make a “dish” in the center of the pile of beans for the salsa. Scoop ¼  of the salsa into the “dish” into a heap and garnish with an oregano sprig on top as shown in picture. Serve immediately.
