FRUIT SALAD IN A PEAR (raw-vegan)
Fruit salad is one of those missed opportunities to get an array of fruit in for most people. When someone says SALAD, people tend to look like a deer in the headlights. Fruit salad is no exception. Most of us grew up with fruit salad meaning canned fruit cocktail with whipped cream and topped with sweetened coconut. I am here to change THAT meaning of fruit salad. My recipe for FRUIT SALAD IN A PEAR is simple, easy and best of all HEALTHY with no added sugar- just RAW FRUIT and MINT. I have a basic combination that I am going to show you but the combinations are endless. Pick fruit that is locally grown from your farmers market and add herbs and spices to change the mood. If you don’t know where to start then this recipe is a great start. Go buy the ingredients listed and next time maybe instead of an apple you get a ripe organic mango, instead of mint you add fresh organic basil… see the combinations can be endless. The only limits on the creativity are set by you. ENJOY!
MAKES 6 STUFFED PEAR HALVES
3 large fresh organic pears (pick your favorite kind) be sure to choose pears with firm flesh, no soft spots or blemishes
1 tsp raw organic meyer lemon juice
1/4 cup whole fresh organic blueberries, cut in half
1 small organic baby jazz apple (or small organic red apple), small dice
1 fresh organic mandarin, small dice flesh, zest (see next in list) and reserve the rest of the peel for another recipe
1/4 tsp of fresh mandarin zest
4 large fresh organic mint leaves, chiffonade [stack leaves on each other, roll tightly lengthwise and thin slice the roll width-wise to make thin ribbons as shown mixed in the fruit salad above.]
Cut your pears length-wise, using a small ice cream scoop, press down on the core area with the inside of the scoop and gently cut a bowl into the flesh where the core and seeds were…. SEE PIC BELOW
Now brush the complete inside of the pears evenly with the lemon juice, use more if needed but just to coat. In a small mixing bowl, mix your halved blueberries, diced apples, mandarin zest, diced mandarin and chiffonade mint, this is now your fruit mix. Evenly distribute this fruit mix in the pear “bowls”, they will be overfilled. Serve immediately or chill covered no more than 1 hour.
