GREEN TEA ICE CREAM (raw-vegan)
Yet another FAVORITE dessert of mine is GREEN TEA ICE CREAM…. Well my version of it. Yes, this recipe has the flavor that you crave but is completely RAW and VEGAN; to help you stick to your program. I like to keep this in the freezer so that when the urge comes, I can satisfy my taste-buds. Note: this recipe delivers a TRADITIONAL flavor- semi-savory and the texture is in between a sorbet and ice cream- very refreshing!
2 cups homemade RAW ALMOND MILK(click here for the recipe)
3 organic water decaffeinated tea bags
1 TBSP fresh organic almond pulp (from your almond milk recipe)
1 small ripe organic avocado, peel and pit
3 TBSP organic raw blonde coconut nectar crystals
1/4 tsp fresh ground pink Himalayan salt
In a large bowl at room temperature, infuse your almond milk and tea bags, stir and gently squeeze often, it will take about 7 hours. Remove the tea bags and compost. Place the infused milk in your blender, and blend with the almond pulp, avocado, coconut crystals and salt on high for 2 minutes until smooth. Place this mixture in your ice cream maker [I have an old fashioned one that goes directly in the freezer and uses NO SALT in the machine] complete cycle. Use a small ice cream scoop and serve. I think garnishing with fresh mint leaves gives it a nice contrast when serving, as shown in the picture above.
