INDIAN SPICED RICE (vegan)
Being that Indian Spiced Rice is full of spices and flavor, it makes it’s own entrance into your dinner party. This recipe is healthy, vegan and very versatile- it can be topped with your favorite korma, sauce or eaten by itself. I hope you enjoy this recipe as much as my family does!
SERVES 4 ENTREES OR 8 SIDE DISHES
2 cups organic brown basamati rice
2 cups water
2 cups unsalted homemade organic vegetable stock
1 tsp. whole allspice
1 TBSP fresh micro-planed whole cinnamon stick
1 tsp. fresh micro-planed whole nutmeg
1/4 tsp. saffron threads
1 tsp. whole green cardamon pods
In your spice grinder (I use an old coffee grinder) grind all the spices to a fine powder. FOR BEST RESULTS- use rice cooker to steam the rice. Add all of the ingredient now to the rice cooker and turn on. Stir after about 15 minutes. Top your rice with your favorite Indian sauce or eat alone. ENJOY!
