ISLAND SMOOTHIE (raw-vegan)
Pineapple n Papaya n Mango, OH MY! Yes this is another smoothie from my RUSTIC and SIMPLE SMOOTHIE COLLECTION. If the opening statement got your attention, then you will be happy to know that is the ingredient list (except add a little water). This ISLAND SMOOTHIE is made of whole fruit so you know that when you are enjoying sipping on this, your body is getting a ton of nutrients. I love smoothies like this, because it always reminds me of being on vacation in the islands. When I travel to the islands, I seek out the local farmers market and have fresh local tropical fruit everyday. I have even been known to gather fruit on my walks. There is nothing like fresh ripe fruit blended up in a smoothie. Not only is the flavor intense but the smoothness is heavenly. To top it off there is no need to add any sweeteners to it; mother nature took care of that for you. So next time you are wanting an island paradise in a glass, give this recipe a try.
A CHEF’S TIP: always try to pick the ripest fruit possible. Pick fruit that is vibrant, no blemishes and of course organic.
1 large ripe organic mango
1 cup fresh organic red papaya, medium diced
1/2 cup fresh ripe organic pineapple, medium chunks
1/2 cup cold water
Wash your mango well and medium dice the flesh with the peel intact. NOTE: if you lay the mango on its side on a cutting board, make slices through the flesh off center. There is a large wooden pit and you can run your knife along it to remove the meat. Continue to remove any meat around this pit. Add this to your blender with the water and blend on high for 2 minutes. Add the papaya and pineapple and blend until smooth and thick. This is a thick smoothie, almost shake consistency. If you prefer a thinner smoothie, add small amounts of water (after the above directions are completed) until desired consistency is achieved. ENJOY!
