Persimmon Ginger Smoothie (raw-vegan)

Persimmons are one of those fruits that not many people know that you can eat raw. Most only know it when it is baked into bread or pudding. I love the winter because that is persimmon season. I like to use my fresh raw persimmon cut up on salads, eat plain by itself or create a PERSIMMON GINGER SMOOTHIE…..YEAH BABY! This smoothie is fresh tasting with a zing from the ginger. I added a little raw agave syrup and raw cider vinegar to cut the stringent feeling in the mouth. CHEERS!!


1 large organic ripe persimmon, remove stem

2 organic baby jazz apple (or small red), core and quarter

1/2 tsp fresh organic ginger, rough chopped

1/4 tsp raw organic cider vinegar

1 cup water

1/2 tsp raw organic agave syrup

In your blender add all of the ingredients EXCEPT the agave syrup and blend until smooth. Add the agave syrup and blend for 1 minute. Serve. NOTE: this smoothie is on the thick side so if you like it thinner, add more water (after all the ingredients are blended smooth) until desired consistency is achieved.
