Pina Colada Smoothie (raw-vegan)

“If you like pina coladas, and getting caught in the rain….” Yes, it is a BAD song to think of but I couldn’t help it when I was making it. I guess I just dated myself! YES, this is a PINA COLADA SMOOTHIE. NO, it doesn’t contain alcohol but it does have all of the smoothness and flavor that the classic cocktail boasts of. The difference is that it uses fresh ripe fruit with no added flavors or sugar to the mix. This recipe is great to have at any cocktail party or to start your day; in fact anytime would be good. It is RUSTIC and SIMPLE and full of nutrients that will nourish you while you dance in the moonlight.

A CHEF’S TIP: Only use FRESH and RIPE ingredients, these flavors are AMAZING!!


1 cup fresh organic young Thai coconut milk (water)

1 cup fresh RIPE organic pineapple, small chunks

3/4 cup fresh organic young Thai coconut meat shreds

pineapple leaves

In your blender, blend the pineapple chunks and coconut shreds with 1/2 cup of the coconut milk, on high for 3 minutes until smooth. Add the remaining 1/2 cup of coconut milk and blend o high for 1 minute until thick and smooth. Pour into your serving glass and garnish with a paper umbrella and pineapple leaves to complete the look :) NOTE: if you prefer a thinner smoothie, add more coconut milk after you have followed the directions until desired consistency is achieved. ENJOY!!
