RAW ALMOND MILK (raw-vegan)
Over two years ago I “broke up” with drinking or using cows milk. Instead I have tried many other milks including soy, coconut, hemp, almond and rice milk. I would have to say that ALMOND milk is my favorite for cooking and coconut milk is my favorite for drinking. Since I have been on a RAW VEGAN yearly kick-start, it has been difficult to find commercially produced RAW milks besides raw dairy…. So I decided to make my own.
This recipe is for unflavored and unsweetened RAW ALMOND MILK.
MAKES about 2+ cups MILK and about 1 cup almond pulp
1 cup whole raw organic almonds (buy whole nuts because they are the best quality thus best quality of milk)
water to soak the almonds
3 cups water to blend with
Soak your almonds for 14 hours at room temperature in a large mixing bowl with clean water. Drain and rinse your almonds. In a blender, blend the soaked almonds with 1 cup of water until smooth, then blend on high for 1 minute. Add the second cup of water and blend for 2 minutes on high. Add the third cup of water and blend for 2 minutes on high. Strain this mixture in a fine metal mesh strainer, reserve the pulp for other recipes(put into a sealed container in the refrigerator). Refrigerate your milk in a sealed glass container for up to 3 days.
