Raw Dry Roasted Peanuts (raw-vegan)

As time goes on, I am realizing that being a RAW VEGAN foodie has its advantages. Not only do I look and feel GREAT but I am also trying new foods and methods. I do not feel like I am missing out on most traditional food because it has prompted me to make raw vegan versions of them. With football season (gulp, and the holidays too) coming up, what does a raw vegan foodie do at all those get togethers and parties? Well I just bring an appetizer or dish that I can enjoy without going off my lifestyle. We all have favorites that we like and what is watching one of America’s favorite sports without one of America’s favorite snacks– dry roasted peanuts? I have always loved not only to serve them but to eat big handfuls of them at parties. I always thought they were a pretty healthy snack. There is just something about them that screams PARTY!! The thing that screams “PARTY POOPER” is how they are made and with what. Most commercial dry roasted peanuts are very highly processed and full of chemicals. These nuts start out as commercially grown with pesticides and possibly GMO plants. Then these nuts are hot chemical blasted to remove the skins and to wash away any molds and debris. Then off to the blanching pot where they are cooked in boiling water. To finish them they are rolled in a coating that consists of salt, refined sugar, artificial flavorings, coloring and MSG. Then they are roasted at high temperatures until crisp and packaged. Since ALL of these processes and ingredients are NOT my idea of healthy, I decided to make my own RAW DRY ROASTED PEANUTS. These are made with only 100% raw organic ingredients and the processing adheres to the definition of RAW. Now that I choose to make my own raw dry roasted peanuts, I will never again indulge in commercially produced peanuts. What choice will you make? If you choose to make your own, here is my recipe for raw dry roasted peanuts…. PARTY PARTY!!

A CHEF’S TIP: these guys go fast so I always make triple and quadruple batches. I store them in a sealed airtight glass container out of sunlight until I am ready to use them.

MAKE 1 CUP (multiply accordingly)

1 cup raw organic spanish peanuts

4 cups water

1 TBSP raw dry organic onion

1 TBSP raw dry organic garlic granules

1 tsp organic nutritional yeast

1/2 tsp fresh ground pink salt

1 TBSP raw organic sugar

1/2 tsp salt free raw organic curry powder

In a large bowl, place peanut in and cover with the water. Soak for 24 hours. Use your fingers and remove all of the skins off of the peanuts, discard any off colored ones, rinse the naked peanuts and drain well for 10 minutes, shake occasionally. In a spice grinder (I use an old coffee grinder) grind the dry ingredients to a fine powder. In a dry mixing bowl, place the drained naked peanuts in and mix well with the powdered spices. Place the coated peanuts on the slotted  trays of your dehydrator, place the trays in the dehydrator. Allow to set for 16 hours at room temperature (do NOT turn on yet), this will allow the coating to marinate the peanuts. Dehydrate the peanuts for 20 to 24 hours or until crisp. I tested them every hour after 12 hours. Drying times may vary so be sure to test the peanuts as recommended. The finished product will be dry but not crumbling, just like commercial dry roasted peanut texture. Remove from the trays and place in an air tight container, allow to cool for 1 hour. Seal the container, place out of sunlight and enjoy.
