SIMPLE MELON BALL SALAD (raw-vegan)

With Summer in full swing now, I find that the warmer weather prompts me to eat a lot of fruit. There is nothing like eating chilled fruit in salads and smoothies. Fruit to me is very refreshing and with the abundance of fruit available this time of year, I am sure to have a variety. One of the easiest ways to get fruit on to your menu is to make a fruit salad. Don’t let the simplicity fool you, with the endless combinations that you can make, no two salads will be the same. One of my favorite fruit salads to make is a SIMPLE MELON BALL SALAD. This fruit salad consists only of melon and is served in a hollowed out watermelon bowl. The refreshing melon is a taste-bud hit and the presentation adds interest to any meal. This salad can also be made from the remaining fruit balls that you make from RAINBOW FRUIT SKEWERS. Since everyone likes fruit, why not bring some with you to the next party or get together? [This also guarantees that you have healthy items to snack on too] To prepare this dish for transport–I cut my fruit the night before and put in a sealed container in the refrigerator to chill. I also cut and hollow out my watermelon bowl, cover it in plastic wrap and refrigerate. The next day I just put both in my cooler with ice and way we go to the party. At the party just unwrap the watermelon bowl and fill with the melon balls, see… pretty simple. NOTE: you can also freeze the watermelon bowl, just fully wrap in plastic wrap and freeze overnight, take out of the freezer before transporting, wrap it in a towel to insulate it and then place in your cooler. At the event, unwrap from the towel and place it back in the freezer until you are ready to fill and serve it. A frozen watermelon bowl will help keep the chilled fruit salad cold for a couple of hours. So now that you see how easy it is to make a simple melon ball salad, put it on your list for the next party.ENJOY!

A CHEF’S TIP: use the trimmings from making your melon balls for other recipes like smoothies, fresh fruit salsa or fruit salads

SERVES 10

1 medium organic ripe personal seedless watermelon

1 ripe organic cantaloupe

1 ripe organic honeydew melon

Prepare your watermelon bowl by cutting off the top 1/4 of the melon by the button. Now use a melon baller and remove all the meat from the inside, reserve the uniform balls in a large mixing bowl, reserve the trimmings for another recipe. Use a large metal spoon and scrape the remaining meat out and reserve for another recipe. Use a small knife and trim the cut part evenly removing all the red meat. Now cut the cantaloupe in half and remove the seeds with a large spoon and discard them. Use a melon baller and remove all the meat from the inside, put the uniform balls into the large mixing bowl with the watermelon balls, reserve the trimmings for another recipe. Use a large metal spoon and scrape the remaining meat out and reserve for another recipe, discard the scraped rind. Now cut the honeydew melon in half and remove the seeds with a large spoon and discard them. Use a melon baller and remove all the meat from the inside, place the uniform balls into the large mixing bowl with the watermelon and cantaloupe, reserve the trimmings for another recipe. Use a large metal spoon and scrape the remaining meat out and reserve for another recipe, discard the scraped rind. Mix the melon balls well and fill the prepared watermelon bowl and serve.
