SIMPLY CREAMY PESTO SAUCE (raw-vegan)
My Simply Creamy Pesto Sauce is RAW and VEGAN… YEP, it really is! I use it on warm zucchini ribbons when I want a fully RAW meal or toss organic udon noodles with it for a healthy vegan meal (as shown above). Use this recipe anywhere that calls for pesto sauce, the uses are endless.
MAKES 1 CUP SAUCE
1 cup fine pulse chopped organic fresh basil leaves (from your window herb garden)
4 large fresh organic garlic cloves
1/4 tsp. raw apple cider vinegar
4 TBSP RAW CASHEW PASTE (see recipe below)
1/4 cup water
In your food processor, fine pulse the basil and garlic. Mix vinegar with chopped basil and garlic, place this mix on solid tray(one for fruit leather) of your dehydrator and dehydrate for 15 minutes. Return basil garlic mix to your food processor and blend with water and raw cashew paste until smooth. Return this mix to the solid tray and dehydrate for 20 minutes. Now serve and ENJOY!
RAW CASHEW PASTE
MAKES ABOUT 1/2 CUP PASTE
1 cup raw organic cashews
1/2 cup water
Fine chop your cashews as fine as you can in your food processor. Add water and blend until smooth. Use in recipes or refrigerate up to 1 week tightly covered, stir well before using.
