“SMOKEY” TOMATO SAUCE (raw)
Looking for a delicious tomato sauce to use with raw sprouted bread or on raw vegetable noodles? Look no further then my “SMOKEY” TOMATO SAUCE. This recipe is 100% RAW, VEGAN, and GLUTEN FREE yet it is bursting with flavor and is good for your tummy!
MAKES ABOUT 1 or 1.5 CUP(s) OF SAUCE
4 small organic vine ripe tomatoes, pulse to a small chopped not pureed
2 black cold smoked cardamon pods, grind fine (I use an old coffee grinder to grind my spices)
2 TBSP raw coconut aminos
1 large ripe organic lemon, zest and juice, reserve both
2 large fresh organic garlic cloves
1/2 cup fresh organic basil, rough chopped (from your window herb garden)
4 large fresh organic basil leaves, chiffonade [stack leaves on each other, roll tightly lengthwise and thin slice the roll width-wise to make thin ribbons as shown above.]
Using your food processor, pulse your garlic and basil until fine, do not puree. In a mixing bowl, combine all of your ingredients well and allow to sit for 12 hours loosely covered at room temperature. In your food dehydrator, place the sauce on your fruit leather tray (the solid one) and dehydrate for 10 hours, stir every 2 hours. Remove from the dehydrator and garnish with fresh basil, serve or refrigerate tightly covered for up to 3 days (if you don’t eat it all up first).
