SPICED APPLE CRISPS (raw-vegan)
Just because an apple a day helps keep the doctor away, doesn’t mean you can’t have fun with that apple. Apples are full of vitamins and nutrients and the flavor and colors of the different varieties are endless. One of my favorite ways to eat apples is SPICED APPLE CRISPS. These snacks are FUN, TASTY and HEALTHY; kids even dig them. Because they are naturally sweet, no added sugar is needed either. The flavors of the spices used give them a kick and some have even called them addicting. If you are looking for a snack that the whole family will rave about, make some spiced apple crisps, they will love them!!
A CHEF’S TIP: the proper tools in the kitchen can make a world of difference in preparation times for recipes. When I have recipes like this one that require thin slices, I break out my mandolin. The cuts are even and can quickly be done. I also have an apple core tool, this makes coring apples a breeze without cutting the apple in half to remove the core.
MAKES ABOUT 100 CRISPS
8 organic FUJI apples, wash and de-stem
4 large organic lemons
1 TBSP fresh micro-planed whole cinnamon stick
1 TBSP fresh micro-planed whole nutmeg
1 TBSP fresh ground dried orange peel (from your ORANGE PEEL GRINDER)
NOTE: if you have a small dehydrator do these in 1/4 or 1/2 batches (depending on how many trays you have) for best results.
Zest and juice the lemons, reserve the zest for another recipe, place the juice in a small bowl. Using an apple core tool, core your apples. Use a mandolin and thin slice the apples starting from the top of the apple to make rings. Dip each slice in the lemon juice to evenly coat and place on the slotted trays of your dehydrator, be sure not to overlap. In a small bowl, mix the cinnamon, nutmeg and orange peel. Now lightly dust one side only of the apples with this spice mix. Dehydrate until crisp, about 6 hours, do NOT turn. Remove from the dehydrator and store in an airtight container for up to 4 days.
