Spiced Applesauce Banana Parfait (raw-vegan)

My SPICED APPLESAUCE BANANA PARFAIT recipe is actually not a parfait at all, it is a fruit and nut dessert that can be layered like a parfait. [The french definition of PARFAIT is a layered iced dessert that is made with egg yolks, sugar, cream, and flavoring of some sort (sometimes fruit or liquor)… this recipe is a far cry from the traditional definition.] Just because this “parfait” is not loaded with fat and sugar doesn’t mean it can not become a favorite guilty(less) pleasure…. Just think- a dessert that you can enjoy every night without packing on the pounds or hating yourself in the morning. Bon Appetit!

MAKES 1 PARFAIT–multiply accordingly

1 large ripe organic banana

1/2 cup spiced raw applesauce (see below recipe or click here)

1/4 cup raw organic almonds, rough chopped

TO SERVE IN A PLAIN BOWL- Slice your banana into the bottom of the bowl, place applesauce in the center on top of bananas, garnish with chopped almonds. Serve now or if preferred really cold and icy, place in freezer for 20 minutes

TO SERVE IN A SUNDAE DISH- Slice 1/3 of your banana into bottom of dish, top with 1/2 of apple sauce, layer 1/3 banana, rest of applesauce, top with rest of banana, garnish with chopped almonds. Serve now or if preferred really cold and icy, place in freezer for 20 minutes



7 whole green cardamon pods, grind fine (I use an old coffee grinder)

1 tsp. fresh micro-planed cinnamon stick

1 tsp. fresh micro-planed whole nutmeg

4 cups fresh organic pink lady apples that are pulse chopped fine

4 tsp. raw apple cider vinegar

2 cups water

In a blender, rough puree (want to still see slight texture) in small batches of 1 cup chopped apples plus 1/2 tsp vinegar and 1/2 cup water. When done place in a medium mixing bowl. Once all the apples are processed, mix in the remaining 2 tsp. of vinegar and spices in and blend well. Place on the fruit leather tray (the solid one) of your dehydrator evenly and dehydrate for 1 hour. Remove from the dehydrator tray into a sealable container and refrigerate for 24 hours. Stir before serving or using in another recipe.
