SPICED RAW APPLESAUCE
This recipe is a RAW twist on a classic favorite, applesauce. My Spiced Raw Applesauce is full of flavor, has a slight chunky texture, not too sweet(no added sugar) and adheres to the basics of raw foodism. I use spiced raw applesauce in my SPICED APPLESAUCE BANANA PARFAIT(raw), use it in my vegan cooking and baking as an egg substitute, and top my organic oatmeal with it. Don’t forget it makes a GREAT dessert by itself. NOTE: you can also make PLAIN raw applesauce for a versatile ingredient for your raw or vegan baking by omitting the cardamon, cinnamon and nutmeg; just process the remaining as stated in the recipe.
MAKES ABOUT 3 CUPS SAUCE
7 whole green cardamon pods, grind fine (I use an old coffee grinder)
1 tsp. fresh micro-planed cinnamon stick
1 tsp. fresh micro-planed whole nutmeg
4 cups fresh organic pink lady apples that are pulse chopped fine
1 TBSP raw apple cider vinegar
2 cups water
In a blender, rough puree (want to still see slight texture) in small batches of 1 cup chopped apples plus 1/2 tsp vinegar and 1/2 cup water. When done place in a medium mixing bowl. Once all the apples are processed, mix in the remaining 2 tsp. of vinegar and spices in and blend well. Place on the fruit leather tray (the solid one) of your dehydrator evenly and dehydrate for 1 hour. Remove from the dehydrator tray into a sealable container and refrigerate for 24 hours. Stir before serving or using in another recipe. ENJOY MY FRIEND!!
