SPICY CHICKPEA NUTS (vegan)
Chickpea nuts are a very healthy way snack anytime during the day without worry. My recipe for SPICY CHICKPEA NUTS are made with organic sprouted chickpeas and have no added preservatives. They have 3.6 grams(only .05 grams of saturated) of good fats and 8.86 grams of protein per ounce of finished chickpea nuts compared to peanuts of 14 grams(5 grams of saturated) of fat and 8.4 grams of protein; clearly a wiser choice. I like to make large batches of these guys to keep around to snack on, take when I travel and they go great on salads! I also have to have to make large batches because these do not last long with this family. So grab a handful or two and happy snacking…
A CHEF’S TIP: take the time and sprout your chickpeas the full 5 days, the flavor is fresh and the chickpeas will be soft.
MAKES ABOUT 2 CUPS (multiply accordingly)
1 TBSP fresh organic jalapeno, fine chopped
7 large fresh organic garlic cloves, fine chopped
1 TBSP organic olive oil or coconut oil
1/2 tsp fresh ground sea salt
Preheat oven to 275 degrees. In a large mixing bowl, mix all of the ingredients EXCEPT the sea salt well. Place on an ungreased pizza sheet (I use one with vent holes in the bottom) and place on the center rack of your oven. Stir and flip every 20 minutes until crispy all the way through( about 1 1/2 hours). Sprinkle evenly with the sea salt and allow to cool for 15 minutes before serving. Store in an air tight container for up to 1 week.
