SPRING SLASH SMOOTHIE (raw-vegan)

Spring has SPRUNG and what better way to celebrate its arrival than with a SPRING SPLASH SMOOTHIE?? I can’t think of a better way. I have been dreaming of warmer weather all winter long and it is here. One of the best things about spring, besides the flowers and waterfalls on my hikes, is the array of spring fruit. I LOVE FRUIT, especially in season fruit! Up here in the mountains, we do not have local farmers markets yet, but the market has a great selection of in season fruit for me to enjoy. The wonderful colors and varieties make my taste-buds go crazy and my creativity flow. This RUSTIC and SIMPLE SMOOTHIE is part of my collection and I am confident it will land on your list too. This smoothie is not only a great way to start your day but why not serve it at brunch or at your spring party as a non-alcoholic alternative? This recipe is designed to easily be multiplied for the masses… So next time you are at the market, grab up these few ingredients, rock them in your blender and toast to SPRING with a SPLASH! CHEERS!

A CHEF’S TIP: always choose fruit that is firm with no blemishes, vibrant and organic!

SERVES 1 large smoothie or 2 small servings, multiply accordingly

1 cup organic seedless red flame grapes

1/2 cup ripe organic ruby red grapefruit, medium chunks

1 cup ripe organic strawberry slices

In your blender, add the grapes and blend on high for 1 minute. Now add the grapefruit chunks and blend on high another minute. Add the strawberry slices and blend on high an additional minute until smooth and creamy. Pour into your serving glass(s) and enjoy.

TO MAKE GRAPEFRUIT GLASSES: as shown in pic above–I hollow out whole grapefruits (use the meat in the smoothie) by cutting off the top 1/4 of the grapefruit and gently use a spoon to remove the meat. It is a GREAT presentation and fun for the kids!!

NOTE: if you are making in large batches, blend up your batches and transfer to a pitcher to easily pour.
