Sprouted Chickpea Hummus (raw-vegan)

SPROUTED CHICKPEA HUMMUS (raw-vegan)

Hummus is a very versatile dish that can be enjoyed by all including raw foodies. This spicy RAW version of classic hummus is full of nutrients, protein, and lots of flavor while being within the guidelines of RAW FOOD. It uses raw sprouted chickpeas, vegetables, spices and cold pressed olive oil. Be sure to serve your sprouted chickpea hummus with fresh organic veggies, spread on raw sprouted grain breads, serve with raw polenta chips or any other way you like to eat hummus. ENJOY!!

MAKES ABOUT 2 CUPS HUMMUS

2 cups 5 day sprouted chickpeas(raw)

1/4 cup sesame seeds, 1/2 white and 1/2 black

2 large fresh organic garlic cloves

1/2 cup fresh organic red bell pepper, medium chunked

2 whole large black cardamon pods, fine grind

1 tsp. whole cumin seed, fine grind

1 TBSP water

9 TBSP water

1/2 tsp. mild paprika

1/4 tsp. chili powder

1 TBSP plus 1/2tsp. raw coconut aminos

2 TBSP organic unrefined cold pressed olive oil

In a food processor, grind your sesame seeds fine. Add the garlic and pulse to fine chopped. Add the red bell pepper and pulse to a fine chopped. Add 1 TBSP water and puree, remove to a mixing bowl and add the cardamon, cumin, paprika, chili powder, coconut aminos and olive oil  . Pulse grind your chickpeas until fine ground, mix well with the other seed/veggie/spice mix, this is now your chickpea mix. In a blender, puree the chickpea mix in batches of 1 cup chickpea mix and 6 TBSP water until smooth. After all the batches of chickpea mix are smooth, place evenly on the solid tray of your dehydrator. Dehydrate for 3 hours, mixing every 30 minutes. Remove and refrigerate covered for 3 hours. Lightly sprinkle with paprika before serving.
