SWEET POTATO PANCAKE (vegan)
Step away from using white potatoes and check out these SWEET POTATO PANCAKES. They are full of healthy vitamins and good fats while being VEGAN…. Yep, and they are SUPER TASTY!
MAKES 6 LARGE PANCAKES
4 cups fresh organic sweet potatoes, un-peeled and shredded on a cheese grater
2 cups water
1 TBSP fresh organic garlic fine chopped
2/3 cup fresh organic green onions, thin sliced, separate into 1/2 cup and remaining for garnish
1/2 cup whole raw organic cashews, grind into a medium meal
1/4 tsp fresh ground sea salt
1/2 tsp chili powder
3 TBSP raw cashew paste
1 TBSP organic olive oil or organic coconut oil
2 TBSP water
In a large pot, put your shredded sweet potatoes and water in, cover tightly and on high heat bring to a boil. Turn heat off and allow to steam for 20 minutes, stir at about 8 minutes. Drain the sweet potatoes and squeeze/press extra water out (warning might still be hot). In a large mixing bowl, mix the squeezed sweet potato with 1/2 cup green onion, ground cashew meal, sea salt and chili powder until mixed well. Now mix in the cashew paste 1 TBSP at a time until evenly blended. Scoop out 1/2 cup and make into a patty, repeat for the remaining mix (5 more patties). Heat the oil in a large frying pan on medium heat. Place your patties in and cover, cook until dark golden brown. Flip the patties, add 2 TBSP of water and cook until dark golden brown while covered. Remove from heat and allow to rest for 10 minutes, garnish with remaining green onion and serve.
