TRES PICANTE CHILI FRIJOL (VEGAN SPICY THREE BEAN CHILI)
This spicy three bean chili is a favorite of mine. This recipe makes a big pot of chili so that you can freeze or can the extra for a later date. This is great to make a day or two before game day for that hungry crowd of sports fans.
1 cup dried organic black beans (negro frijoles), rinsed
1 cup dried organic adzuki beans, rinsed
1 cup dried organic dark red kidney beans, rinsed
12 cups water
Combine above ingredients in a large pot. Bring to a roaring boil and boil for 2 minutes stirring occasionally. Remove from heat, cover tightly and let set for 2 hours, drain but do not rinse.
4 cups medium diced fresh organic vine ripe tomatoes
8 large fresh organic garlic cloves, fine chopped
1 large organic white onion, medium diced
2 organic hot peppers, small diced (pick your favorite like jalapeno or hot banana pepper from your window herb garden)
1 Tbsp. fresh ground pink sea salt (omit if using store bought stock)
1 Tbsp. cayenne chili powder
2.5 Tbsp. whole cumin seed, lightly dry toast on medium heat and fresh grind (I have an old small electric coffee grinder I use)
8 cups water
3 cups vegetable stock (preferably homemade without salt)
6oz can of organic tomato paste (reserve until the end)
garnish with fresh chopped organic cilantro and diced organic avocado
Place all the above ingredients except tomato paste and garnish in a large pot with a fitting cover. Add drained beans. On medium high heat, cook chili covered for 1 hour, stirring often. On medium low heat, uncover part way to allow venting until the beans are tender (about 3-4 hours) and the liquid is down to 1/4 of starting point, be sure not to let liquid get to low. When beans are done, stir in tomato paste and return to low heat for 15 minutes, stirring occasionally. Allow to rest for 30 minutes. Serve with chopped cilantro and diced avocado. If this is for tomorrow, cool and store covered in the refrigerator. You can also freeze in 2 cup portions or can in quart jars. NOTE: for the non-vegans in the crowd, also add a dollop of organic sour cream and shredded organic sharp cheddar cheese.
