Vegetable Quiche

Serves 4 entrées or can be cut into 8 slices for side dishes:

1/2 large organic red bell pepper, medium diced (about ¾ cups)

1 medium organic green zucchini, medium diced (about 2 cups)

6 large organic garlic cloves, chopped fine

1 Tbsp. organic butter

2 Tbsp. water

10 large black olives sliced into 4 rounds each

2 cups fresh organic baby spinach leaves

2 Tbsp. fine chopped fresh organic basil (from your window herb garden?)

8 large organic free range eggs

1/4 tsp. chili powder

1/4 tsp. fresh ground pink sea salt

*2 Tbsp. organic sour cream *OR any non-dairy substitute for sour cream you choose like here

Organic sour cream for garnish

Preheat oven to 400 degrees, grease with butter an 8.25″ x 3″ round glass baking dish. In a medium frying pan, heat on medium heat for about 2 minutes. Add red pepper, zucchini, garlic, and water. Turn to high heat and sauté veggies until zucchini is half translucent, remove from heat. Add spinach and basil. Stir and mix well until spinach is completely wilted. Let cool for about 10 minutes. In a separate bowl, whisk eggs until well beaten, add salt, chili powder and 2 tablespoons organic sour cream then whisk until completely smooth. Add vegetable mixture 1/4 cup at a time while stirring…(When you add veggies be sure to thoroughly stir about 10 stirs, be sure not to add too fast or it will make eggs scrambled) after all of vegetables are mixed in, pour mixture into prepared baking dish. Place olive slices evenly on the top of the unbaked Quiche. Set on middle shelf in oven and bake for 40 or until bottom and sides are medium golden brown. Center will still be a bit soft.  Remove from oven and let set for 20 minutes undisturbed. Cut into 4 equal slices (like a pie) for entrée size or 8 slices for side dishes.  Garnish with green onion and organic sour cream.
